It's my day off of work and I definitely was not going to drive anywhere.
So I decided to stay in with Mr. Caesar.
He and I bummed around the house and tromped around in the fresh powder.
We made delicious sandwich cremes.
Oreo, eat your heart out.
The cookie is a dark chocolate sugar cookie and the filling is french vanilla buttercream frosting.
These don't even compare to childish Oreos. They are way more mature...and sinful. ;)
Dark Chocolate Sugar Cookies
Adapted from Sweetapolita
-3 cups all-purpose flour
-3 cups almond meal/flour (If you don't have almond meal, use a total of 6 cups all-purpose flour)
-1 1/4 cups natural cocoa powder
-1 teaspoon salt
-2 cups (4 sticks) unsalted butter, softened
-2 cups granulated sugar
-1 cup light brown sugar
-3 large eggs, cold
-2 teaspoons pure vanilla extract
1. In large bowl, sift flour, cocoa, and salt and set aside.
2. In an electric mixer cream butter and sugars until pale. About 5 minutes.
3. Beat in eggs until just combined and add vanilla.
4. Add the flour mixture and mix on low until fully combined. I had to use my hands to blend in the dried goods.
5. Once fully combined, separate the mixture into two sections and form each section into a disc. Wrap them in plastic wrap and chill for 45 minutes.
6. Once chilled, preheat oven to 325° F. Remove one disc. Roll out the disc on a well floured surface until it is a little thicker than 1/8". Make your cookies with a circular cutter (I used the cap for a spice jar about 1 1/2" wide).
7. Place the cookies on cookie sheets about about 1" apart.
8. Bake for 7 minutes or until the cookies are just crisp on the outer edge.
9. After baking let the cookies sit on the pan for about 1 minute then gently remove the cookies and place on wire racks to finish cooling.
Vanilla Buttercream Icing

I made 1 1/2 batches
-1 cup salted butter (2 sticks) (Use salted butter...use it.)
-4 cups confectioners sugar
-4 tablespoons french vanilla coffee creamer
If you don't have the french vanilla creamer use 3 teaspoons vanilla and 4 tablespoons regular coffee creamer or heavy cream
2. Add sugar and creamer alternating one cup/teaspoon at a time until all is combined.
3. Beat frosting for 3 minutes.

Then all you have to do is assemble the adult-like treat.
Recipe will yield about 11 dozen sandwich cremes.
If you're in the Milwuakee area, take a little break and frolic in the snow with your furry best friend or your dog. heehee
And then treat yourselves (actually just you, not the dog...that would make for a terrible post-powder romp treat) and make some cookies.
